March17.15 Dinner Plate


Lunch time is the time when Mama Eula always makes amazing dishes and dinner is the fun part because we eat left-over as well as Pinoy food that can easily be prepared.

Tonight we ate pork chop grilled in philkraft double pressure pan. We are only eating a matchbox size of pork (as my health addict mom, Mama Eula researched hihi). And my favorite dried fish! Tuyo! I usually eat this with vinegar (and chili) hehe

Another rule of thumb regarding rice:
1 cup if brown rice
1/2 cup if white rice (especially during dinner)
thus, the small amount of rice on my plate hehe

March17.15 Tuna Pasta in Olive Oil with Fresh Organic Tomatoes and Asparagus



Today Mama cooked one of those pasta dishes that she can magically whip. Because she research a lot about healthy food and healthy living she knows what to buy and what to put in our food. When we went for a jog at UP Los BaƱos which is just a few minutes from our house, we usually buy these organic vegetables from a local farmer/producer.

This dish is cooked the following ingredients:
canned tuna in oil
(she also uses fresh tuna half of the time)
olive oil
asparagus
tomatoes
onion
garlic
little salt and pepper to taste
no weird additives! hehe

I remember one time one of Mama's friends was here for our pasta breakfast and she was so amazed that pasta can be cooked like this - simple yet tasty!
even without all those weird sauces hehe

April07.15 Mama's Kare-kare with Binagoongan


The dish that Mama Eula prepared is Kare-kare.

"Kare Kare is a traditional Filipino stew complimented with a thick savory peanut sauce. The commonly used meats for this dish are ox tail, tripe, and pork leg; on some occasions goat and chicken meat are also used. Besides the peanuts, this dish depends on the shrimp paste (on the side) in order to be fully enjoyed. Traditionally, “palayok” (clay cooking pot) is used to cook this dish and it is also used as the serving pot"

It is served with shrimp paste but instead of just that, Mama prepared another dish - "binagoongan" which is also shrimp paste based but sauteed with pork/bacon cubes.

April09.15 Bebebro Got Inspired. Result = Shawarma Rice!


Shawarma Rice with Garlic Sauce

Whenever bebebro is inspired,  he cooks. I always see his shawarma rice when I was in NL but I haven't tasted it until this morning. It was cooked with veggies, chicken and fishballs. It is then served with garlic sauce with the side of fresh veggies and sunny side up.

Well it tastes really good and compared to the shawarma rice you can buy from the shawarma kiosks, we are sure of the oil he used which is Mama Eula's homemade coconut oil ♥

Breakfast = Tummy SATISFIED!

March15.15 Proud Pinoy Food!


One of my comfort foods = Tuyo! 

Tuyo (dried fish) is any type of salted then dried fresh fish. I stayed abroad for just 3 months but I understood why Filipinos living abroad miss this. It captures the freshness of our fishes in the Pacific..yumm!

In this meal prepared for dinner tuyo is fried and served with my fluffy tuna scrambled eggs and fried rice.

March15.15 Crab for Sunday Lunch

Crab and Veggies in Coconut Milk

This is the most cooked coconut dish in our household. Every weekend Mama Eula schedules seafood + cocomilk for our cheat day hehe

The ingredients for this yummy and creamy dish are
Crab
String beans
Squash
Ginger
Coconut Milk (kakang-gata or first extract)*


*I experienced cooking with cocomilk in Netherlands and the canned type "cream" can also be considered "kakang-gata"                                    

April08.15: Our Amazing Lunch!

This is my serving for what mama cooked for lunch. YUM!!!
Homemade fried chicken, camote fries and fish sinigang (sour stew) with a variety of vegetables served with a heart-shaped cup of brown rice.

The fish sinigang is cooked with no artificial flavoring with the following ingredients:
Fish - Talakitok (Eng.Cavalla, jack o trevally)
Labanos (Eng. Radish)
Talong (Eng. Eggplant; Dutch Aubergine)
Kamatis (Eng. Tomato; Dutch - Tomaat) 



Mamu Eula's homemade fried chicken and fresh camote fries which can be compared to fish and chips (or well chicken and chips hehehe)

March23.15: Breakfast: Prawn Pasta with Wheat Bread


Mamu Eula usually cook pasta lately because she said it is easy to make and prepare. She only uses olive oil for sauce and sautee veggies and protein (in this case prawn) for sauce.


April03.15 Lunch: Sinigang na Bangus


Pinoy na Pinoy! 
Mama Eula's version of sinigang na bangus served with 
heart-shaped white rice (a crime in our house since we commonly eat brown rice)

No flavorings were added to her dishes so there is less
salt and unhealthy components as possible.

Ingredients include:
milkfish or bangus
kangkong or water lettuce
radish
onion
salt and pepper to taste


April02.15 Lunch - Grilled Yellow Fin, Veggies and Brown Rice


This healthy meal is composed of
1 heart-shaped cup serving of brown rice
Philcraft grilled yellow fin
steamed okra
boiled mussels
tomato-onion-calamansi in soy sauce

April02.15 Breakfast - Seafood Pasta


Because she is shy to put a blog about her healthy cooking, I will start it immediately with this dish.
